If I'm not mistake, Japan has a huge vending machine/automat food culture. They have large, almost like food courts, dedicated to these machines and areas to dine. They even have some that are staffed where cooks prepare fresh meals to then place in the machines as people buy them.
I think a similar concept as a niche would be popular, maybe go a smaller, high end food, to draw in the diners. But then try a more utilitarian version after people have warmed to the concept

I worked at a major medical center in NYC. It sucks that the cafeteria closes in most of them by 7 pm. I think Truman closes at 5 pm. The night shift workers, and family members who stay near their loved ones all night, are stuck with a limited vending machine offering that is often junk food. If you have a family member in serious condition for weeks, the vending machine situation gets old fast.
I had a friend at North Kansas City hospital and I used to go every night to keep him company. I would often have to bring in my own food since I arrived around 5-6 pm. For a while, he was often going to the emergency room frequently, and I would wait hours there as well. The vending machine food sucked. And for people on specific diets, most of the food is off-limits. I've always found that strange. A hospital should be about health, yet much of the food available after hours is very unhealthy.
I would think an automat-type situation would also work in college dorm cafeterias.

- AFAIK it's not found outside of The Netherlands so we could make it a tourist attraction
- It's Dutch, so maybe it will subconsciously implant progressive transportation ideals into people who eat there
