From their facebook page seems it will be in midtown & opening is planned for April 1st. As a half-filipina I am really excited about this news!

I am guessing they go into the old Cafe Trio/Graffitti Grill/NuNu's Cafe spot or this weird spot on Main Street across from Davey's that once hosted a bunch of failed restaurants.

I am completely unfamiliar with Filipino food. Sell me on it!

I do know what balut is. DO NOT WANT.

I think you can get balut at Vietnamese Cafe in Columbus Park if you ask for it. It's not on the menu but I've seen it served (or it looked like it).

Adobo

Pancit
Longaniza
Lumpia
Halo halo

I'm not a huge Filipino restaurant fan, but we do eat a fair amount of chicken adobo, which employs a surprisingly underused stewing/baking technique.

Halo halo is quite popular but kind of gross to me.

Adobo and lumpia, baby, yeah!

Note, of course, that Filipino adobo isn't really the same as the Spanish / Latin American stuff.

quite different. very sugary and MSGy usually.

Bicol Expresses is delicious for those who like coconut milk and spice. Anything from the Bicol region is really gonna have some spice to it!

Biko is an amazing desert type sticky rice...basically i like anything stewed in coconut milk I guess.

Diniguan for those who like boiled pigs blood!

I think I met the woman behind this at a party. I'll have to follow up next time I see her. We had about an hour of drunken conversation about food.

Adobo is what many call the national dish of Philippines. I've never had any that would be considered sugary, but the preparation can vary wildly depending on what regional variation you are eating. The adobo I had in Cebu was closer to jerk chicken than anything else, and quite delicious.

My favorite thing about the cuisine of the Philippines is that the region is such a melting pot. There are strong Spanish and Chinese influences (and many other Southeast Asian influences), but the number of languages and subcultures and religions, etc. in the country is astounding. I absolutely love a good congee, which is such a simple yet delicious rice porridge. Lechon is also terrific if you are human and like spit-roasted pig. There are a ton of different spins on these general dishes, so it will be fun to see what the restaurant has to offer.

Lechon! Yum!

This is pretty exciting. Wife and I traveled to Philippines for a bit last year. Hopefully I get to go back.
