I wouldn't mind them taking over some of the Picklemans spots in KC. Surely the Picklemans bubble is gonna burst. It's not very good

KC is clueless when it come to subs. Though so are many other markets.

Now this is a sub. Crusty bread (note mostly torn out), a nice olive oil/vinegar tapenade, decent meat portion (note the bread/meat ratio), greens (not iceberg). This is from White House Subs in Jersey...

There's nothing about that that looks good to me. Too much meat and can't fit in any human sized mouth.

A proper sub, and sandwich for that matter, should be contained in bread and edible to a normal human.

That's just a load of crap wrapped in bread and called a sub.

Don't knock it until you try it. You've just proven my point. Many Jersey places don't stuff that much meat (and may offer 'extra meat' orders like this) but crusty hard Italian roll that is carved out is the typical standard with a lower bread ratio. Most "sub" places are too bready, don't have cappacolla and don't offer an olive/caper tapenade. They're typically generic sandwiches - and there's a place for that, but aren't anywhere close to traditional subs and hoagies out of upper Atlantic.

KC has its own creation that tops traditional subs anyway... Pigwich. Would be great if they could expand but the unfortunate natural outcome of expansion is that quality tends to water down.

^Yeah that's a rare one in KC that's an exception. In the ballpark anyway. Carollo's in City Market tries but mostly bready, not too bad but not exactly above avg either - better than the chains anyway. Not that Jersey style subs with processed meats are worth getting all analytical about... and I just went there.. :)

I agree- especially regarding Carollo's. Too much bread.

The Napoli is a standout in KC. I'd recommend "The Trap" at North End Diner too.

Jersey Mikes seems to be the favorite of franchise chain subs on E Coast, though it's still closer to other franchise mainstream watered down subs than traditional counter deli subs. Using iceberg lettuce is an indication that they probably don't use a decent quality meat - typical of franchise chains (though Panera manages not to).

Iceberg literally waters down your eats and takes flavor away as it's over 95% water.
