we do use the ciabatta for our banh mi and our cheesesteak. we taste tested it against the baguette and it was quite indiscernible between the two - add to that the baguette costs 2x as much per serving and has an 18 hour shelf life and we went with the ciabatta. it's crunchy and soft and really ful...

We're getting ready to open another pop up next week and I'm hoping to solicit some feedback from anyone who attended last time.

I had a charbroiled pork bahn mi and it was $4.75. That's really expensive for a bahn mi.
