Erbert and Gerbert's. Its very similar to Jimmy John's I think they are actually cousins but they offer some really great soups and when they gut the bread they server that piece of gutted bread for you to eat, it goes great with butter or dipping the soup.

Cousin of a cousin, apparently. The middle "connector" cousin runs Milio's Sandwiches. Wild.

Braums and Whataburger - you guys don't aspire to much.
As much as I dislike Houston, there are couple of pretty good local chains that I would not mind seeing in KC. One is Lupe's Tortillas - Mexican place where everything is made to order. Meals take a while and they don't seat large parties so the kitchen doesn't get overwhelmed but the food is very good. Menu: http://www.lupetortilla.com/pdf/togo_mobile.pdf
Another is any number of restaurants owned by the Papa's family. I personally favor Papadeaux although they have a good Mexican place called Papasitos. They've expanded to San Antonio, Austin and Dallas now and even outside of Texas....there's even one in Bush International Airport. Several of my friends eat there prior to international flights because they don't want to be awoken on the flight for dinner (just about everyone arrives way early to Houston Bush Int for flights because traffic can put you back an hour easily).

I would be pretty excited if a Shophouse opened up here. As far as I know, the concept is only available in the DC area, but it is a Thai-inspired variation of Chipotle (I actually believe it is owned by Chipotle). http://shophousekitchen.com/

Del Taco
El Pollo Loco
I think there might be a Jack in the Box in KCK, but they need to come to KCMO and the northland.

I would love it ( my gut wouldn't, but I would ) if the folks down in Pittsburg would open a Chicken Annie's in the area. Lots of PSU alums in KC.

Restaurants are one of the very few "lifestyle" amenities in KC that I am very satisfied as they are. A real strong suit. There are loads of other things I'm jealous of in other cities, but food isn't really one of them.

No joke. I tell my coastal friends that we have places just as good as anything they do, maybe not as many, but I can go there any night of the week.

Third vote for White Castle, although I really, really hope if it comes (back), it's far enough away that I'm not tempted to put on 50 pounds.

I'd love a White Castle in Westport or Midtown.
