So just a guess.. still primarily a BBQ restaurant but with full sit down service instead of counter? But will it have an onsite outdoor pit or indoor pit? Indoor pit tends to lack smokiness, and hauling smoked meats from other location can lower quality.

Guessing the Joe's concept will involve them brewing their own beer. Seems crazy to yank the beer tanks out of Gordon Biersch.

Given they are downsizing they may be willing to sell but maybe not in markets they stay in.

Of course I'm considering KC joints only. Why tf would I be talking regionally or nationally?
And you're a kansan so - you prove my point perfectly.
Joe's is Kansans way of getting an ounce of BBQ cred in KC - when they have never before had any.
That's the main reason they hype Joes' crap.
The other reason is they're scared to go downtown or the "hood" and Joes is safe.

Joes has above average ribs - everything else on their menu is average or below.
Then subtract points just for being dumb asses and putting cheese on BBQ.
= barely above average.
Q39, Jackstack, Gates, LC's, Bryants, Danny's and others including Jazzy B's in Lees Summit are all way better.
If they build in P&L and get rid of that idiot cheese sandwich I still wouldn't go when I have better choices.

Everyone agrees that "some BBQ is actually better than other BBQ" because there is a mass consensus of best places in KC.
Example: Everyone knows that Rosedale BBQ sucks ass, but it's cheaper, has decent fries and it's easy to get in/out during lunch so it remains open.
